As asked by the crew I was cycling with today here is my recipe for my bike bars!
They are really easy to make and no-cook. Fridge chilled and they freeze too.
Change the recipe anyway ye like!!

@Andrew - below is the mix for the energy squares I had today
A variant of www.shutterbean.com/2011/lemon-date-bars/
which has step by step photos
I use a ratio of roughly 2 fruit to 1 nuts
Eg 100g dates 100g apricots 50g almonds 50g cashews
(buy at H&B when they are doing their buy 1 get second for 1c offers)
swap in any other bits you find leftover (e.g. sultanas / cranberries / pecans)
blend the lot in a food processor
add some grated ginger
process some more
add zest and juice of 1 lemon
process some more
spoon the sticky mess onto a tray lined with greaseproof paper
put it in the fridge for a couple of hours
remove and cut into squares
dust with coconut flour (so they aren't too sticky to touch)
leave them in the air overnight to dry out some more
then store them in an airtight box and use as required
